Our products

We produce musts for oenological use and are certified in the treatment and production of Cooked Must and Concentrated Musts suitable for Modena IGP Balsamic Vinegars. We also have the suitability for the treatment of organic products according to EC regulation 834/07. Desulfurated musts for sparkling bases and fermentations. We make our facilities available for transformations on a Processing Account.

Grape Must

We produce very high-quality grape must, obtained exclusively from carefully selected grapes. Throughout the entire production process, we pay the utmost attention to details to ensure the highest quality of our product.
We also produce desulfurated grape must, which has undergone a process of removing SO2, known as desulfuration. This process is designed to reduce or eliminate the presence of sulfites, which can cause allergic reactions in some people. Thanks to desulfuration, our desulfurated grape must has significantly lower or no sulfite content, offering an ideal alternative for those who are sensitive to such compounds and wish to initiate natural fermentations.

Concentrated Must

Our concentrated must, a denser and richer version with a unique organoleptic substance that fully preserves the authentic flavor of Sicilian grapes.

Rectified Must

It is obtained through a process of rectifying grape must, followed by a concentration to remove excess water.
This process allows for a must more concentrated in sugars, also called grape sugar.
The MCR is used to enrich musts during fermentation, contributing to obtaining wines with desired organoleptic characteristics.

The deionization process can vary depending on the specific needs of the producer and the type of must desired. In general, rectified must is a valuable ingredient in the food and beverage industry, offering a wide range of creative possibilities thanks to its versatility and flavor concentration.

Cooked Must

Our cooked must is a unique product, obtained through a slow cooking of grapes.
This process gives the must a rich flavor and a enveloping texture, perfect for many culinary and winemaking preparations.
